Make the Most of Your Green Space with Home Grown Greens:  Coconut Brie and Avocado Salad

One of the challenges many urbanites face is the size of our green space.  Living in Toronto where housing prices are high and condo/apartment living is plenty I have to get creative when it come to growing fresh herbs and vegetables.  This year I decided to incorporate beautiful boston, romaine and red leaf lettuce in my hanging balcony garden.  I paired the purples of the lettuce with bright green vines and mixed in flowers.  Now I am reaping the rewards of fresh lettuce everyday!

To make this salad you will need:

a mix of fresh lettuce (I used boston, baby romaine and red leaf lettuce)

1 avocado

2 tbsp chopped pecans

2 tbsp dried currents

4 - 6 wedges of coconut flavored brie cheese

3 tbsp olive oil

1 tbsp lime juice

sea salt

Arrange lettuce on individual plates ad a flower pattern.  Slice avocado and cheese and place near the center on the salad.  Garnish with pecans and currents.  Mix olive oil and lime juice.  Drizzel over top.  Add salt to taste.  Serve immediately.
