Avocado Spinach Pasta to Die For

Creamy Avocado, Spinach and Walnut Pasta

This creamy pasta is loaded with raw healthy ingredients and is an excellent alternative to using heavy cream. The avocado makes for a rich sauce while the walnuts add flavor and protein.

prep time: 10 minutes
cook time: 10-15 minutes
servings: 4

Ingredients:

350 grams spaghetti pasta
1 avocado
1 cup spinach
1/4 cup cilantro (alternative: parsley or basil)
1/2 cup walnuts (alternative: pecans)
1 clove garlic
1 tbsp lime juice
3/4 cup pasta water
salt to taste

Directions:

  1. Bring salter water to a boil. Add pasta and cook according to package directions (around 10-15 minutes depending on the brand of pasta).

  2. Prepare the rest of the ingredients and place in blender. When the pasta is almost cooked take pasta water and add it to the blender. Puree.

  3. Toss pasta and sauce together. Serve immediately and enjoy!
